Notes
The naked (no sauce) wings this recipe makes are excellent on their own, but also allows each person to sauce for themselves with whatever flavor(s) they choose. Tater Tots make a great side for wings. Add them when the oven hits 450 in convection mode. When the chicken is resting, turn the oven off, crack the door, and let the Tots remain warm until time to serve. No convection setting? As a rough substitute, run the conventional oven about 25 degrees hotter for the final crisping step (about 475 instead of 450) and keep an eye on it in case it needs a few extra minutes -- convection's fan is what does a lot of the crisping work, so this is an approximation, not a tested equivalent.
